Pineapple Pudding





Ingredients
  • 1 stick margarine, softened
  • 1-3/4 cups sugar
  • 3 eggs
  • 1/2 cup milk
  • 1/2 tsp. vanilla
  • 1 can crushed pineapple, unsweetened and undrained (20oz.)
  • 3 cups cubed white bread, crusts removed (8-9 slices)
  • firm textured (day or two old) bread works best for this recipe.
Directions
  1. Preheat oven to 325 degrees F.
  2. Lightly butter a 9" square(1-1/2 qt.) glass baking dish.
  3. Cream margarine and sugar with mixer.
  4. Beat in eggs, one at a time.
  5. Stir in undrained pineapple, milk and vanilla.
  6. Fold in bread; pour into baking dish.
  7. Bake 1 hour.
  8. Serve warm or at room temperature.
  9. Make sure glass dish is at room temperature before baking. May be prepared a few hours ahead and baked when ready to serve.
