Double Onion Pizza

- Yield: 1 30-cm pizza

Ingredients
- 1 tablespoon olive oil
- 2 red onions (250g total), halved and cut into 5mm slices
- 2 brown onions (250g total), halved and cut into 5mm slices
- 2 cloves garlic, minced
- 1/2 teaspoon sugar
- White pepper
- 1 purchased pizza base (30cm)
- 1/4 cup tomato pasta sauce
- 1/3 cup sliced bocconcini cheese (fresh mozzarella balls)
- 10 fresh sage leaves
Preparation method
- Heat 2 teaspoons of the oil in a large nonstick frying pan over moderate heat. Add the onions and garlic, and sprinkle with the sugar. Cover and cook, stirring occasionally, for 7 minutes or until the onions are soft. Uncover and cook, stirring frequently, for 5 to 10 minutes or until golden brown. Stir in pepper to taste.
- Preheat the oven to 240°C. Spray a baking tray with cooking spray. Place the pizza base on the prepared tray.
- Stir together the pasta sauce and the remaining oil in a small bowl. Brush the mixture over the pizza base, spread the onion mixture on top, then add the bocconcini and the sage leaves. Bake for 10 minutes or until the dough is crisp and the onions are piping hot.
